Cauliflower Fried Rice

My husband and I both are in our early thirties and believe it or not our cholesterol level is higher than our parents( I blame my liberal use of butter/ghee!) So since our daughter is born we both are trying to live a healthier lifestyle ( Don’t want to miss her graduation or wedding!) .Let’s be honest, saying” No “to Biriyani or rice, mashed potato topped with ghee is tough but if we find yummy alternatives to rice and bread and manage to stick to it, losing couple of extra pounds or bring back your cholesterol level to an acceptable range is …doable! So I’m having “No Rice” policy in my house for as long as I can control myself and making this quick , super easy and delicious recipe a regular ! If you are on the same boat as ours give this recipe a shot, you won’t regret!

Cook time :15 Minutes

Total time : 35 minutes

Yield: 6/8 servings

Ingredients

1 Cauliflower

2 eggs

1 cup mixed vegetables, whatever is available

1 Chicken Breast cut into small pieces, you can also use shrimp/lamb/beef.

1 onion

3 garlic cloves, minced

Olive oil cooking spray

salt and black pepper according to your taste

cayenne pepper according to your taste

3 tbsp soy sauce

splash of white vinegar

1 tbsp cumin powder

1 tbsp garam masala, available at any Indian grocery store

1 tbsp lime juice

3/5 scallions

fresh cilantro /parsley/ rosemary is always a good idea

3/4 green chili, if not available you can use 1 Serrano pepper , minced , if you like your food spicy!

optional:if you have Desi style pickle, any pickle will work like mango/olive/garlic, you can use the oil from the pickle to add more flavor.If you do not have , you can get one from your Indian grocery store.

Instructions:

  1. First to make the cauliflower rice, cut the cauliflower into small florets and put them in the food processor in small batches .You want the texture to look like rice/couscous!
  2. Heat the skillet over medium heat , spray with olive oil .
  3. Add the chopped onion and garlic ,cook them until soft and brown.
  4. If you want to add chicken /shrimp/beef/ground turkey /tofu it’s time to prepare them now.Cut the chicken /shrimp in small pieces.Add the chicken/shrimp in the skillet , add salt, black pepper, cayenne pepper ,and lime juice. Sauté frequently until brown and cooked .I like to add Rosemary in the oil while cooking chicken . Chicken and rosemary compliments each other so well.
  5. add the veggies and sauté ,you can use chopped carrots, english peas or whatever you have that day in the fridge.
  6. when the veggies are almost done , add the eggs and scramble and mix with the veggies.
  7. add your cauliflower “rice” into the mixer.
  8. .add salt, pepper, cayenne pepper, cumin, garam masala ,soy sauce and vinegar.
  9. Cook for 10 minutes stirring frequently or until the cauliflower is slightly crispy . Do not overcook it , if you do not want them to become mushy .This is a good time to add pickle oil if available.
  10. When it’s done add some chopped fresh cilantro and scallion to garnish and enjoy your guilt free , delicious meal .
