Ratatouille

Please tell me that you’ve watched the movie “Ratatouille”! Well if you haven’t I highly recommend . This animated feature film actually won all the awards in 2008 including the Academy Award, Golden globes, BAFTA, Critics’ Choice you name it. So if you haven’t watched it yet, it’s time my friend for you to make this dinner and watch the movie with your kids.

So honestly, I love Ratatouille cause you can actually get an “impressed look ” from the crowd because of how the dish looks ( and I live for that s**t! #peoplepleasurehere) . Not to mention it’s super healthy and a great side dish for any function. You can actually engage your kids or friends to help you make the dish. How? let’s check out!

Prep Time: 30 minutes

Cook Time: 45 minutes

Total Time: 1 hour 15 minutes

Yield: 2 to 4

Cuisine: French

Get the eggplants that are the same size as the zucchini. It wasn’t available in my grocery store at that time.

Ingredients:

  1. 2 eggplant ,thinly sliced
  2. 2 yellow squash, thinly sliced
  3. 2 zucchini, thinly sliced
  4. 4 tomatos,thinly sliced
  5. 1 carrot or few baby carrots
  6. 1 can of tomato paste
  7. 1 onion
  8. 3/4 cloves of garlic
  9. fresh thyme & rosemary
  10. fresh cilantro
  11. 5 Tbsp of olive oil or to taste
  12. Salt and pepper to taste
  13. Cayenne pepper, optional , I use it cause I like everything spicy !
  14. 3/4 cups of water

Instructions:

1.Pre heat the oven at 375 degrees F ( 190 Degree C for my BD girls)

2. Thinly Slice all the veggies except the carrots.Put them aside.

3.When the veggies are slightly roasted , add the tomato paste and water. Cook them until the veggies are cooked enough.

4.We’ll make the sauce now. Sauté onion , garlic , thyme, rosemary and the scarping from the eggplant, zucchini and yellow squash. I also add some carrots for some sweetness.

5. Now blend the veggies and herbs to make it like a soup. The thickness will be like Pizza Sauce. After the blend, You got yourself some very healthy veggie soup , taste a little bit if you want but don’t finish the soup/sauce cause we need the sauce.

6. Spread the sauce on the skillet or baking pan and arrange the veggies. Tell your friends or kids to help you in the arrangement.

7.Put Olive oil, thyme, salt , pepper and some pasta seasonings (I used mushroom seasonings from Kroger) in a bowl , stir them and spread them over the decorated veggies.

8. Bake the veggies for 45 minutes to 1 hour in 375 degree F.

9.Voila ! You’ve just made Ratatouille! good job!
